All our meat and poultry is local + free range + hormone + antibiotic free. Fresh seafood is sourced locally and wild caught where possible. Unless specified, our food is prepared with moderate spice levels to accommodate every palate. Hot sauces are available on your table - but please ask your server if you REALLY  want to spice up your life! If you have any special dietary requirements or allergies, please speak to the Manager or your server before ordering, as not all ingredients are listed. We will do our best to accomodate you!

HEAD CHEF (FULL TIME) - Immediate Start 

To apply for this position you must possess the following skills:
  • Minimum 1-2 years experience as a Head Chef
  • Full working rights & qualifications
  • Ability to work under pressure whilst consistently maintaining and driving high standards
  • Experience running a kitchen in a fast paced restaurant
  • Experience following directions to achieve targets & growth based on senior sales analysis
  • Interest in mexican cuisine to drive new ideas & refine food quality and uniqueness
  • Excellent people management skills motivating a team, managing change, managing conflict and developing individuals.
  • Initiative & creativity to present ideas based on your own analysis and findings
  • Menu writing skills to create seasonal menu specials, themed event menus and private function menus for varying clientele demands
  • Experience organising and implementing menu changes as well as managing various different service styles
  • A calm & level headed approach to day to day duties such as; 
- Labour & Food cost management  (including rostering, ordering & wastage)
- Management of policies, procedures, hygiene standards, training & health & safety (including completion of all required records)
- Communication of all business developments respective to the kitchen team.

  • Excellent health , hygiene and safety standards
  • Positive attitude and willingness to learn and work efficiently
  • Ability to work under pressure.
